Instructions
Melt the butter in a large pot; Add the flour, stir and cook for a few minutes.
Remove the pot from the heat and add the milk all at once.
Mix well and put on fire.
Boil, stirring constantly.
Off the heat, add salt, pepper, nutmeg, grated cheese and egg yolks.
Separately, whip until foamy egg whites firmly and join them to the mixture a tablespoon at a time, stirring with movements from top to bottom.
Pour the mixture into a baking sheet greased and floured and bake in moderate heat (180 degrees) until the surface is golden.
Serve immediately.

- 150 g of butter
- 1/4 cup 1 of white flour
- 3 cups of milk
- 4 eggs (split whites by rossi)
- 80 g of grated parmesan cheese
- Nutmeg
- Salt
- Pepper
