Vegetable flan to three colors
Instructions
Peel the potatoes, wash them, cut them into pieces and boil in salted water shortly.
Scrape the carrots, wash them, cut them into rings and boil in salted water shortly.
While the vegetables Cook, turn on the oven to 200 degrees, washed lettuce and watercress, then cut them and let them dry with a little butter.
Eventually drain and beat them.
Grease a pudding or cake pan and rivestitelo with the breadcrumbs.
Whip egg whites until foamy.
Drain the carrots and blend.
Drain the potatoes and mash with a fork and remaining butter cream.

Divide the mixture into three parts: a mix pureed carrots, another the lettuce and watercress puree and leave the third as it is.

Fill the mould with layers of a few centimetres, alternating colors, then cook for 30 minutes in the oven already warm.
Let rest a few minutes before unmould.

- 50 g of grated parmesan cheese
- 50 g of grated emmenthal cheese
- 2 tablespoons of breadcrumbs
- 60 g of butter
