Leek pudding
Instructions
Prepare the béchamel sauce with ingredients listed perfumed eventually with nutmeg.
Allow it to cool.
Meanwhile boil the leeks in salted water.
Drain, then toss them to the knitting mill, collect them in a bowl, add the pine nuts and blend the sauce cold.
Add the grated cheese, salted egg yolks.
Gently add the egg whites very firm.
Pour the mixture into buttered moulds and bake in preheated oven at 180 degrees for half an hour.
Retired and after a few minutes put the stencils on a serving dish.
