In a pan heat the oil and butter and, over high heat, quickly bake the slices of meat.
When they are ready add salt on both sides, put them on a serving dish and keep them warm.
Pour the brandy into the bowl, stir to dilute the broth and let it evaporate.
Add the cream, let it warm up, adjust the salt if necessary.
As soon as the sauce thickens, stirring rapidly mix in the mustard and pour over steaks.
Serve well-heated.
