Saddle of Hare with Dolcetto d'Alba with Pumpkin Puree
Instructions
Brown saddles with butter, salt, pepper and spices; squirt with Dolcetto and cook for 4 minutes in the oven at 250 degrees.
Remove from oven and let stand for 10 minutes to warm.
Meanwhile prepare the pumpkin puree with butter, pumpkin, broth, salt and pepper, all cold.
Cook until the pumpkin is well dry, then move to Blender adding some Ribbon of butter and seasoning if necessary.
