White celery stew
Instructions
Fry the onion and carrots, cut into thin slices in a baking dish with the butter, add celery cut into pieces, season with salt and pepper and pour the lemon juice and wine.
Bring to a boil, then add the broth, cover the baking dish with a sheet of aluminum foil and cook on lowest guide of the oven at 180 degrees for 15-20 minutes.
When the vegetables are cooked, remove from dish, passed through a sieve the broth and let Cook gently until thicken.
Serve the vegetables with the sauce and a few celery leaves.

- == 1 small onion
- 150 g of carrots
- 30 g of butter
- 400 g of white celery
- Salt
- White pepper
- 1/2 lemon (juice)
- 5 cl of white wine
- 30 cl of veal broth
