Almond milk syrup
Instructions
200 g of peeled sweet almonds including 12 love, after being held for a few minutes in hot water: then put them in a marble mortar with a dollop of fior d'arancio.
Pounded well up to reduce them as a paste, and dissolve this with 300 g of fresh water.
Filter the mixture through a cloth, which torcerete with force to let out all the milk almonds; put the white scum in the mortar that will be left in the cloth, wetting it with another spoonful of fior d'arancio, and dissolved the dough with other 300 g of fresh water, still passes through the cloth, squeezing.
Together the two liquids, which put on the fire.
When the liquid is hot, pour 800 g of white sugar, and let it boil for 20 minutes.
Allow to cool, then imbottigliatelo.
