White stuffed broccoli cheese
Instructions
Peel broccoli stems, discarding the fibrous parts, wash them and then boil them in plenty of boiling salted water; keep aside some boiled whole bunch, which will serve as a garnish and passed the rest to the mixer along with the ham and anchovies, after they have been boned and rinsed salt.
Season everything with a fresh ground pepper, chopped parsley, very little salt, mix well and spread on slices of scamorza: 36 in all, drawn from past form to slicer.
Wrap the cheese slices on themselves to get the rolls.
Accomodateli in the serving dish, on a bed of salad; seasoned with a little olive oil, salt, pepper and chopped parsley; Garnish with sprigs of broccoli kept aside and bring right to the table.
Suggested wine: young white wine, dry, harmonious and fragrant (Breganze Vespaiolo, Torgiano Pinot grigio, Vermentino di Sardegna).
