Escalopes of perugia
Instructions
Cleaned and de-boned and chop anchovies with ham, chicken fegatino, capers and garlic clove.
Put the beat in a pan with 3-4 tablespoons of olive oil, a little lemon juice and grated rind of this and some Sage leaves.
Lay the meat, add salt and pepper and simmer 10 or 12 minutes over medium heat.

- 8 veal slices
- 50 g of ham
- 30 g of olive oil
- 3 salted anchovies
- 1 chicken fegatino
- 2 teaspoons of capers
- 1/2 lemon
- Garlic
- Sage
- Salt
- Pepper
