Velvet sauce (2)
Instructions
To find mushrooms in warm water.
In a pan melt the butter, Add flour, stirring with a wooden spatula and cook for 2 minutes.
Add the broth and bring it, stirring constantly, simmer.
Add mushrooms and parsley, a pinch of nutmeg, salt and ground white pepper.
Continue to cook for another 10 minutes over medium heat and cover pan, making sure that no attacks.
When cooked, strain to pass.
Critical to prepare sauces, white meat and fish and velvety.

- 50 cl of broth
- 50 g of butter
- 50 g of flour
- Nutmeg
- Some of dried mushrooms
- 20 g of parsley
- Salt
- White pepper in grains
