Tempura sauce
Instructions
Simmer 30 cl of water.
Put the dashi powder in a small saucepan and sprinkling it with boiling water.
Stir until it is dissolved.
Stir the other ingredients.
Place the saucepan over medium heat and bring to a boil; Let simmer for 5 minutes, then remove from heat.
Spread the sauce into four individual bowls heated and put one in front of each diner.
The dashi is a small fish broth consisting of tuna and seaweed; in Japanese cuisine is the basis of many sauces and soups.
You'll find it in specialty stores in Eastern products.
Buy it in powder form and dilute with hot water.
If you can't find it, use a sturdy chicken soup which, however, will not give the same exquisite taste fishy.
Ingredients and dosing for 4 persons
- 2 tablespoons of instant dashi powder
- 4 tablespoons of soy sauce
- 4 tablespoons of sake
- 1/2 teaspoon of sugar
- 1 pinch of ground ginger
