Instructions
In a bowl mash the yolks firm with a fork, add the mustard, parsley, salt and pepper.
Do mix well ingredients and then begin to pour the oil flush, like mayonnaise, without ever stopping to mix.
When the sauce is full-bodied vinegar, add the egg whites and the finely chopped gherkins.
Ingredients and dosing for 4 persons
- 3 hardboiled eggs
- 1 tablespoon of mustard
- 1 tablespoon of chopped parsley
- 2 tablespoons of wine vinegar
- 1/2 cup of olive oil
- 3 gherkins
- 1 handful of capers
- Salt
- Pepper
