Gamekeeper's sauce
Instructions
Wash and clean the mushrooms and cut them into pieces and braise them in a non-stick pan with lemon juice.
Remove mushrooms from pan and place on a sheet of absorbent paper.
Put the sifted flour in the Pan, add the chicken broth, previously prepared with water, and allow to reduce the mixture.
Put the mushrooms in the bowl and then heat without boiling.
Add the Madeira at the last moment.
Serve with white meats or poultry.
Ingredients and dosing for 4 persons
- 500 g of mushrooms
- 5 lemons
- 1 tablespoon of madeira wine
- 125 cl of water
- 4 dice to chicken broth
- 5 tablespoons of flour
