Salsa de aòbaniles
Instructions
Put the onion, garlic and salt in a mortar or in a mixer.
If you are using a mortar and pestle, grind well.
If using a mixer, beat once very quickly.
It is very important not to grind too or the consistency of the sauce it would suffer.
Add the coriander and whisk again, very quickly.
Add the Chiles, tomatillos and water and beat again.
Season to taste.
Garnish with chopped coriander and onion.
To prepare all without mortar or blender; chop all the ingredients very finely and mix.
Ingredients and dosing for 4 persons
- 1 onion peeled and cut into quarters
- Segments = 2 = Peeled Garlic
- 2 teaspoons of salt
- 8 sprigs of chopped fresh cilantro
- 12 chiles serranos (or 6 jalapeno peppers without the stalk and roasted)
- 1 1/2 cup of tomatillos, peeled roasted or boiled in water
- 1/2 cup of water
- 1 pinch of sugar
- 1 cup of fresh coriander chopped
- 3/4 cup of white onions, peeled and chopped
