Instructions
Madcow permitting, Cook the brains in a little water with a bit of onion, carrot and celery and passed through a sieve and let cool.
Mix in the mayonnaise and parsley.
Ideal for cool white and red meats.

- 50 cl of mayonnaise
- 1/4 calf brains
- Onion
- Carrot
- Celery
- 1 tablespoon of chopped parsley
- Salt
