Instructions
Toast the hazelnuts and eliminate the film wiping his hands.
Finely chopping.
Put the milk in a sautoir, combine hazelnuts and bring to a boil.
Beat the egg yolks with sugar until white and frothy.
Gradually add the milk with hazelnuts and put everything in sautoir.
Place over heat and slowly bring to a boil, stirring with a wooden spoon.
Before it comes to a boil, remove from heat and place in a bowl.
This sauce goes very well dry cakes, cakes with chocolate or dried fruit.
