Salmon with green sauce
Instructions
Align the salmon slices in a large casserole and low.
Combine the shallots into wedges, wine, a little salt and a few grains of pepper.
Cover and cook at very low heat for 15 minutes.
Meanwhile Peel, boil and squeeze the spinach and then beat them with parsley, chives and cream shredded.
Remove the salmon slices and keep warm in oven at 180 degrees.
Dilute the mixture of spinach with a few spoonful of liquid from cooking fish, filtered, and add salt and pepper.
Mix the mayonnaise with the mixture of spinach, adding if necessary a few spoonful of cooking liquid.
Arrange the salmon slices on plate and pour over a little sauce, and served the remaining apart.
Accompanied with boiled Zucchini.

- 1600 g of fresh salmon (slices from 200 g each)
- 2 shallots
- 10 cl of dry white wine
- 200 g of mayonnaise
- 50 G = = Cream
- 1 handful of spinach
- 4 sprigs of parsley
- 10 stems chives
- Salt
- Peppercorns
