Spring roll
Instructions
Mix the egg yolks and salt with a whisk and assemble the clear snow.
Add yolks one tablespoon of flour and one clear at a time and stir gently.
Pour the dough on the baking sheet covered with a sheet of greaseproof paper greased with butter, allargatelo completely and cook for 8-10 minutes in hot oven (150 degrees).
Turn the dough over a damp towel, remove the paper and, soon after, salsa mayonnaise spalmatela.
Then another with 2 or 3 layers of ham, then roll it up tightly and wrap the roll in the same damp towel.
Keep in a cool place for 1 hour, then cut into slices and serve.

- For the dough:
- 8 eggs
- 1 teaspoon of salt
- 150 g of flour
- 25 g of butter
- For the filling:
- 2 cups of mayonnaise
- 500 g of ham
