Kidney in piaces
Instructions
Wash the kidney repeatedly in cold water, remove the fat and spongy nerve located within and keep it immersed in water and a little vinegar for 10 minutes in order to make him lose the characteristic odor.
Then cut into thin slices and pour it in a pan with a little oil leaving it for a couple of minutes to lively flame.
Drain the water that has collected on the bottom of the Pan and discarding.
Put to fire the pan with butter and a few spoonful of oil, add the garlic and, after a minute, go inside the kidney.
Let it cook for a few minutes (no more than five) rather high focus.
Remove the garlic clove, salt pepatelo and sprinkle with the chopped parsley.
Remove the kidney from the fire, should be sprayed with lemon juice, mix it up and pour it over the dish.
Garnish, if desired, with croutons browned in oil or butter, or roasted in the oven.
Serve immediately on the table with the outline suggested.

- 2 veal kidneys from 300 g each
- 50 g of butter
- 1 tablespoon of chopped parsley
- 1 clove of garlic
- 1/2 lemon (juice)
- Little of wine vinegar
- Olive oil
- Salt
- Pepper
