Kidney in cognac
Instructions
In a pan place the kidney with lard cut into pieces, a knob of butter and let it Brown.
Remove the Pan from the heat, add the cognac and flame for 3 minutes.
Put on the heat and add the port and leave to cook for 20 minutes.
In a tray put the fries, and above the kidney.
The sauce of cooking kidney tie it with remaining butter blended very well and serve.
Ingredients and dosing for 3 persons
- 1 kidney of veal
- 50 g of butter
- 50 g of bacon
- 1/2 cup of cognac
- 1/2 cup of porto wine
