Salt Roast beef
Instructions
Coarsely chopped herbs, place them in a dish and round off the meat, pressing lightly so that the shroud well.
Cover the bottom of a casserole oval (which is a little larger than the meat with a layer of salt, lay the meat and cover completely with the remaining salt.
Put in the oven already warm and simmer for 30 minutes at room temperature.
When cooked remove the roast beef from the oven, split the salt crust that has formed and place it on the serving dish.
You can accompany it with mashed potatoes or mixed vegetables, and Apple sauce.
For the sauce: Peel the apples and cook in a little water and lemon juice.
Then blend with the broth and a pinch of sugar.

- 850 g of roast beef
- 2000 g of coarse salt
- 2 sprigs of rosemary
- 1 teaspoon of thyme
- 1 leaf of laurel
- Apple sauce:
- 2 apples
- Lemon juice
- 1 pinch of sugar
