Instructions

Chop the onion and doratela in butter and oil.

Add the rice and soak with a glass of boiling water; stir continuously.

Each time the rice will have absorbed the water, add additional washers another glass.

Halfway through the cooking add: pepper, salt and saffron.

When the rice is almost cooked, add the chopped mushrooms and grated Parmesan, stirring the whole thing.
