Instructions
Bring to a boil the water in which you put the butter; Add the flour all at once, mixing continuously until the dough comes off the walls of the pot.
Let cool, add the eggs one at a time; Add the boiled potatoes and passed, the ground almonds and pears into small pieces.
Fry the mixture by pouring spoon in a pan of hot oil; drain on paper towels; arrange the beignets on a serving dish, sprinkle them with powdered sugar and serve hot.
