Angler fish of the Adriatic with saffron
Instructions
Put the Saffron in a cup of warm water for 20 minutes.
Clean the fish and put it in a large pan with olive oil, chopped shallots, salt and 2 cups of water.
Simmer for 15 minutes and add water with saffron; Cook 5 more minutes to fire more lively.
Once cooked sprinkle the fish with the grated Parmesan.

- 1 monkfish (angler fish) of 2000 g
- 12 stigmas of saffron
- 1 shallot
- 15 g of grated parmesan cheese
- 3 tablespoons of olive oil extra virgin
- Salt
