Radicchio mimosa
Instructions
Peel and wash the radicchio.
Dry, cut into strips and place in a salad bowl.
In a bowl, emulsify the oil with a little vinegar, a pinch of salt and white pepper.
Seasoned with this sauce on radicchio.
Sprinkle the surface with the egg yolks, mix crumbled firm and serve.

- 4 heads of radicchio
- 4 hard boiled egg yolks
- Little of wine vinegar
- Olive oil
- 1 pinch of salt
- 1 pinch of white pepper
