Biete col pomodoro
Instructions
Clean and wash well the biete and boil in salted water.
Drain and squeeze well and cut into pieces.
Put them in a pan with oil, garlic cloves and, when they are browned, remove them; Add the anchovies mashed in a mortar and the tomatoes peeled and chopped.
Cook for 15 minutes, then add the biete, add salt, pepper and let stand for about 10 minutes, stirring often.
Serve hot.

- 1000 g of biete
- 1 glass of olive oil extra virgin
- 4 anchovies water and de-boned
- 8 ripe tomatoes
- 2 cloves of garlic
- Salt
- Pepper
