Meatballs with vegetables and noodles
Instructions
Passed the beef pulp to the meat grinder (middle) and collect the proceeds into a bowl.
Finely chop the onion and fry it in a pan with a tablespoon of oil, 5 minutes for fresh focus.
Add the minced meat mixture, then add chopped herbs, mustard, salt and pepper and a minced mixed with care in order to mix the ingredients well.
Obtained from the mixture so many round patties the size of a walnut and fry them in a pan with hot oil, over medium heat, until they are well browned on each side.
Prepare the tomato sauce: in a saucepan then heat a tablespoon oil, mix in the tomato paste, add the garlic and let flavour for a few minutes at moderate heat.
Add the ketchup and a pinch of salt, given a mixed, then pour into the Pan also pureeing the tomatoes, Basil and another tablespoon of oil.
Cook the sauce over low heat and covered bowl until thickened, then pass through a sieve.
Peel the courgette and Aubergine, deprived the latter of the Peel, then slice both vegetables into thin slices lengthwise.
The head of garlic peeled and thinly affettatene some whole cloves, leaving the others.
FRY in a pan with the olive oil and the courgette and Aubergine, moderate heat for a few moments so that they do not browned, then levatele from the bowl and put the garlic.
Allow to cook gently until well Golden.
Boil the noodles in a pot with salted water, to which you have added a tablespoon oil, al dente drain and put them in the pan with the tomato sauce.
Add meatballs and even heat all together for a few minutes.
Spread the preparation into two individual dishes with vegetables and serve.

- 150 g of pappardelle
- Salt
- 1 tablespoon of olive oil
- For the meatballs:
- 200 g of beef
- 1 onion
- Salt
- White pepper
- 1/2 tablespoon of dijon mustard
- 1 tablespoon of chopped herbs (sage, parsley)
- Olive oil
- For the tomato sauce:
- 1 box of peeled
- 2 tablespoons of olive oil
- 1 clove of garlic
- 1 tablespoon of tomato paste
- 1 tablespoon of ketchup
- Salt
- 1 sprig of basil
- Vegetables:
- 1 courgette
- 1 long eggplant
- 1 head of garlic
- 2 tablespoon of olive oil
