Bean balls
Instructions
Put the beans in water for a few hours, so they will help loosen well, then cook for an hour and a half with the vegetables.
Drain the beans and puree, add the 2 egg yolks, parmesan and half the breadcrumbs, salt and pepper.
Mix carefully and, if the dough is too soft, add more Parmesan and breadcrumbs.
Work with your hands, mash the meatballs, then put them in egg whites, lasciandovele for a few minutes, and then in the breadcrumbs it adhere well; at this point, FRY in hot oil.

- 300 g of dried red beans
- 1 stalk of celery
- 1 onion
- 1 carrot
- 2 leaves of laurel
- 2 eggs
- 50 g of parmigiano
- 50 g of breadcrumbs
- 2 tablespoons of olive oil extra virgin
- Salt
- Pepper
