Chicken with Olives (Pollo con Le Olive)
Instructions
Clean the chicken and cut into pieces.
Sprinkle with salt and pepper and Brown in the oil in a saucepan.
Combine preserves, chili pepper and cover with water.
Bring to a boil and then lower the flame and cook very slowly.
After about 20 minutes, add the olives and bring the chicken, cooking until the meat will come off well from bones.
Serve hot.
