Pollo alla romana
Instructions
Wash the chicken thoroughly under running water, dry it with a cloth tamponandolo, then cut it in half.
In a small bowl stir the finely chopped garlic, a pinch of salt, a pepper, minced mixed herbs and grated zest of half a lemon, and then sprinkle the chicken with the mixture obtained.
Squirt the bird with olive oil, wrap each half in slices of bacon and place them in a baking pan well greased with oil.
Cook the chicken in the oven at 200 degrees for 15 minutes, then pour in the wine, reduce the temperature to 180 degrees, add the tomatoes and diced onions and bring to cooking (it takes other 30 minutes).

- 1 1000 g chicken ready for cooking
- 1 clove of garlic
- Salt
- White pepper
- 3 tablespoons of chopped herbs (sage, rosemary)
- 1/2 lemon (zest)
- 3 tablespoons of olive oil
- 4 slices of pancetta
- 12 cl of dry white wine
- 300 g of peeled tomatoes
- 100 g of spring onions
- Olive oil for the pan
