Instructions
After cleaning and flamed chicken, wash it, dry it, cut it into four pieces, sprinkle with flour and saute it gently in a pan with butter and oil.
Then add mushrooms previously softened in warm water and wrung the chopped shallots.
Let season well then wet with wine and let evaporate.
Add the tomato sauce, salt, pepper and a little water.
Cover and cook on moderate fire for about an hour.
Arrange the chicken pieces with their sauce on a serving platter and sprinkle with the chopped parsley.
The accompanying wine: Dolcetto Di Diano d'Alba DOC, Sangiovese Di Romagna Superiore DOC, Guardiola Rosso DOC.

- 2 tablespoons of flour
- 2 spring onions
- 2 tablespoons of tomato sauce
- 1/2 cup of dry white wine
- 30 g of butter
- 3 tablespoons of olive oil
- Chopped parsley
- Salt
- Pepper
