Calabrian pizza
Instructions
Place on cutting board with flour and form a central hole.
Pour the diluted yeast in a little warm water, a pinch of salt, boiled potatoes and pass through a sieve and lots of warm enough water to form a dough soft and supple.
Leave to rise in a greased Bowl with a little olive oil.
When the pasta is swollen forming small pizzas (diameter about 6- -8 cm) and FRY in plenty of olive oil.
When ready dress with some mozzarella cubes, a splash of tomato, oregano and, if desired, the anchovies.
Put in oven at 200 degrees for 5-7 minutes.
Suggested wine: a good Lambrusco Grasparossa to 12 degrees.

- 500 G = = 00 Flour
- 1 pinch of salt
- 50 g of brewer's yeast
- 2 boiled potatoes and pass through a sieve
- 250 g of mozzarella, cut into small cubes
- Tomato juice
- Oregano
- Anchovies (optional)
