Cut the potatoes, carrots and celery into small pieces.
Take a baking dish suitable for the fire to the oven.
Fry over heat vegetables, then add salt, pepper, a little grated nutmeg, add a few leaves of Sage and Rosemary, pour the tomato paste, turn well and put in the oven already warm to 200 degrees for an hour or so.
