Mess of herbs
Instructions
Boil the whole zucchini in salted water for 30 minutes.
Boil apart even the rice in salted water for 10 minutes, then drain and wash it under running water to cool it.
Cut the bacon into small cubes, private pumpkin flowers of pistilli and spezzettateli, then saute the garlic and onion, finely chopped, in a saucepan with 2 tablespoons of olive oil.
Drain the zucchini and then let them cool, then spuntatele, spremetele to remove the water, then pass through a food mill.
Add the puree, finely chopped Greens, sauce, basil, bacon, parmesan, flowers, rice and eggs, whisked with salt and pepper, then add salt and pepper to taste.
Pour the mixture into an oiled baking dish, livellandone the surface with a spatula, then cook in a hot oven at 180 degrees for 45 minutes.
Bring the temperature of the oven to 200 degrees and bake again for 10 minutes.
Serve the pie warm or cold.
For an extra touch, try replacing the herbs with 400 g sliced pumpkin, steamed or boiled and then cut into pieces.

- 700 g of zucchini
- 200 g of herbs
- 10 pumpkin flowers
- 2 eggs
- 40 g of bacon (sliced 40 g)
- 50 g of rice
- 40 g of parrnigiano grated cheese
- Olive oil extra virgin
- 1 onion
- 1 clove of garlic
- 1 tablespoon of shredded basil
- Salt
- Pepper
