Batter for frying at mineral water
Instructions
Sift the flour into a bowl, add mineral water, eggs and a pinch of salt and stir until you get a homogeneous mixture.
Cover the bowl with a kitchen towel and let the dough rest for 15-20 minutes.
After this time, stir vigorously again, then pass the mixture through a fine sieve to remove any lumps of flour.
Just before frying, add to the mix the egg whites not too firm.
Add the egg whites a little at a time, so you can check the consistency of the batter: if it gets too runny, discards cooking.

- 2 whole eggs
- 2 egg whites
- Salt
- 20 cl of carbonated mineral water
