Pasta rasa
Instructions
Mix together the breadcrumbs, parmesan, flour, eggs, salt and nutmeg until dough is firm.
Grate the mixture and put it out to dry on a floured cutting board.
After a few hours remove just to prevent the dough from sticking.
After a few hours you can pour the ' rasa ' pasta in boiling broth, letting it cook for no more than 4/5 minutes.
Serve hot and sprinkle with a handful of grated Parmesan.
Ingredients and dosing for 4 persons
- 150 g of breadcrumbs
- 150 g of grated parmesan cheese
- 3 tablespoons of white flour
- 3 whole eggs
- Salt
- Little of nutmeg
- 100 cl of meat broth
