Almond paste
Instructions
Toast some almonds in the oven.
Crush in a mortar with 250 g sugar added little by little with a few teaspoons of water (to be added if the almonds give off oil).
Pass the almond powder sieve, ripestando the large pieces, until almonds and 250 g of sugar.
Pour the almond powder in a saucepan and add the 150 g of glucose.
In another saucepan, pour the remaining 750 g sugar and glucose; put on the heat and cook slowly until the mixture starts to make wire.
At this point add the syrup into the bowl with almonds and continue to stir.
Overthrow the mixture on a marble floor and leave to cool.
The mixture will appear very grainy, you can go in the machine to make the dough, after slightly dampened the rollers.
Otherwise you can also smooth multiple times with a rolling pin to make it smoother.
