Coffee Bavarian cream (2)
Instructions
Put soaked the sheets of isinglass, to soften it.
In a saucepan shelled the only egg yolks, add sugar and mount them in foam with electric whips.
Then carefully fold the cold coffee, a little at a time; bring the pan on low heat and then inflate the bubble without cream.
Out of the fire join seafood glue squeezed and let it dissolve well.
Then let cool, stirring the cream.
Densely mounted the cream; combined with the cream before the essence of vanilla, 2 tablespoons rum and then the whipped cream, stirring gently so as not to dismantle it.
Squirt of rum pudding mold fluted, pour the preparation and put it in the fridge for a few hours.
When serving dip for a few moments the mold in warm water, so that the Bavarian will come off easily, and turn it upside down on a cold plate.
Serve decorated with coffee beans.

- 1 cup of strong espresso coffee
- 250 g of whipping cream
- 100 g of sugar
- 4 sheets of isinglass
- 1 ampoule of vanilla essence
- 4 eggs
- 3 tablespoons of rum
