Base for vanilla ice and cream
Instructions
Boil the milk with the vanilla stick, then let it cool.
Beat the egg yolks with sugar, when you got a swollen and foamy cream, add the warm milk, a little at a time poured through a strainer.
Stir gently.
Finally, always stirring, add a pinch of salt.
Put back on the fire.
Stir in the cream until it has cooled.
If you want a base of only vanilla ice cream, do not put the stick of vanilla to boil in milk.
You can also make a lemon flavoured cream, adding a few drops of lemon essence or grated lemon rind.
Transfer the mixture into the ice cream maker.

- 50 cl of milk
- 1 stick of vanilla
- 5 egg yolks
- 150 g of sugar
- Salt
