The fish should be cleaned but not Hulk.
It is a bed of salt in a baking dish of proper form, it puts the fish and then it covers well the rest of the salt, then moves on to the hot oven at 200-230 degrees, letting it cook for 20 minutes.
Remove the baking dish from the oven and splits the salt crust formed, removing the fish that, in pieces or filleted, you have on serving dish, seasoned with olive oil, salt and pepper.
