Seafood paella
Instructions
Scrape and wash the mussels then let them open a lively fire in a large pan with 1/2 glass of wine, a clove of garlic and the chopped parsley.
Keep aside the filtered mussels and their cooking liquid.
Do Brown the sliced onion and the clove of garlic in a large pan with 4 tablespoons oil.
Add the squid, cleaned and cut into rings and let them stand for a few minutes.
Add the tomatoes blanched, peeled and diced and peeled peppers and cut into fillets.
Let simmer for 5 minutes then add the Saffron dissolved in 3 ladlefuls hot.
Add the cooking liquid of mussels, rice and peas, stir well, Cook for 15 minutes then add the peeled shrimp.
Baking courses combining more broth if there was need.
When cooked, add the mussels and paella, a little chopped parsley.

- 400 g of padna rice
- 1000 g of mussels
- 400 g of shrimp
- 300 g of squid
- 1 red pepper
- == 1 yellow pepper
- 4 fresh green chillies
- 3 ripe tomatoes
- 1 onion
- 100 g of frozen peas
- Dry white wine
- Chopped parsley
- 2 cloves of garlic
- 3 ladles of vegetable broth
- 2 sachets of saffron
- 4 tablespoons of olive oil
- Salt
- Pepper
