Omelette with zucchini
Instructions
Wash the zucchini and cut into Matchstick.
Raccoglietele in a pan for a few minutes and set on fire to open flame to make them dry out a bit.
Add salt and pepper and keep warm by.
Beat eggs slightly, add salt, pepper, add some finely chopped fresh parsley.
In a pan heat a tablespoon of olive oil and a knob of butter, pour in the beaten eggs and cook the omelet so that remains dry and soft.
Ricopritene with courgettes, reflect it, leave on the heat for a minute, then slide the omelet onto a serving dish and serve.
