Wash the olives, practicing on each longitudinal 2 nicks and put them in a jar with water.
Soak them for 10 days, changing the water 3 times a day.
Drain and dry them, put them on a baking sheet, sprinkle with salt and let it dry for 20 minutes.
Transfer them in glass jars, dry and close.
