Clouds in broth
Instructions
Snow firmly mount the egg whites with a pinch of salt.
Mix Parmesan cheese and bread crumbs, then add the egg yolks and work the mixture with a fork.
Incorporate the egg whites gently so as not to remove them.
With 2 teaspoons form balls.
Bring to a boil the broth and pour the balls, stir quickly and leave to cook for about 3 minutes without touching them.
Swollen when they stir and serve immediately.
Ingredients and dosing for 4 persons
- 2 egg yolks
- 4 egg whites
- 50 g of breadcrumbs
- 50 g of grated parmesan cheese
- 100 cl of broth
- 1 pinch of salt
