Nests with scampi
Instructions
Slowly Saute chopped shallots in 1 tablespoon of olive oil for a few minutes, then sit the nests of noodles and cover of fish fumet; Add thinly sliced mushrooms, 4 whole scampi (will be used to decorate the plate), salt, pepper.
Moderate simmer for 5 minutes, the time in which they will be absorbed all the broth and it will be cooked to perfection the nests.
In the last minute to join the remaining prawns (shelled queues only raw, cut into small pieces) and possibly a little more comic, if the dough tends to stick.
End with a nice sprinkling of fine chopped parsley and serve immediately.

- 350 g of type noodles pasta (nidi)
- 200 g of mushrooms
- 8 scampi
- 2 shallots
- 100 cl of fish fumet
- Parsley
- 1 tablespoon of olive oil extra virgin
