Eggplant mucver
Instructions
Peel the aubergines, cut into cubes, season with salt and leave to stand for 15 minutes, then wash them and squeeze them.
Peel the tomatoes and remove seeds and juice.
Cut the peppers into small pieces.
Sauté the onions in the butter for 2 minutes, add peppers and garlic and saute for another 2 minutes, add the aubergines and tomatoes and cook for 3 or 4 minutes on high heat.
Transfer to a bowl and let cool, then add the other ingredients except the oil, mix, make meatballs as a nut and then FRY them.

- 3 eggplant
- 3 grated onions
- 1 clove of finely minced garlic
- 150 g of grated white cheese
- 1 bunch of chopped parsley
- 1 cup of flour
- 3 tablespoons of butter
- 2 small tomatoes
- 2 small peppers
- 5 eggs
- 1 glass of olive oil
