Melt the chocolate with water over low heat.
Lightly whisk the egg yolks and Beat egg whites until stiff.
Merge with great delicacy before the egg yolks, then the egg whites to the chocolate, working the mixture from the bottom upwards.
Refrigerate for at least 3 hours, until the cream will be solidified.
