Instructions
Clean the fish, take away of the head, tail and entrails.
Wash them, dry them, then toss them in the flour.
Heat plenty of oil and fry the Sage, then add the fish, before those smaller and then larger.
Drain on paper towels, then place in a serving bowl, circondateli with lemon wedges and fresh Sage leaves.
Add salt and pepper.
Do not add salt before because the fish does not friggerebbe well.
You can do this by removing the fried backbone and then flour as cutlets.

- 1000 g of mixed silverfish
- White flour

- Some cloves of lemon
- Sage
