Mirepoix greasy
Instructions
Clean, wash and cut carrots, celery, leeks, diced and fry them in a pan with 30 g butter; Add the ham, thyme and bay leaf, with and continue cooking until the vegetables are well cooked.
Check the salt and, if necessary, wet with warm water.
This preparation is used to flavor soups, meats, meat sauce, braised vegetables, sauces, etc.
The ingredients may be subject to changes dictated by the imagination of the Cook staff, seasonal availability of vegetables, or the recipe that requires the use of this mirepoix.

- 100 g of carrots
- 50 g of leeks (or onions)
- 50 g of celery
- 50 g of diced ham
- 30 g of butter
- 1/2 leaf laurel
- 1 pinch of thyme
- Salt
