Minestrone of westphalia
Instructions
Soak the night before the white beans in 2 litres of water.
The next day boil the beans in water soaking, along with half the bacon fat and half lean, for about 60-70 minutes.
Clean green beans and carrots, Peel the potatoes, cut into slices carrots and potatoes and merge them with the beans and green beans with Bacon already prepared.
Cook for another 30 minutes.
Add into the pot apples and pears, peeled and cut into slices.
Continue cooking for another 30 minutes.
Cut into small pieces, Brown onions in butter and add them to the soup.
Season with salt and pepper and serve after sprinkled with parsley.
